How should the Israelites approach agricultural practices in the year of Jubilee?

Leviticus 25:11 (ESV)

11 That fiftieth year shall be a jubilee for you; in it you shall neither sow nor reap what grows of itself nor gather the grapes from the undressed vines.

The year of Jubilee carries the same restrictions as a Sabbatical year. This means that the nation may not farm the land for two consecutive years.
