Why does the woman describe the man as leaping over the mountains and hills?

Song of Solomon 2:8 (ESV)

8 The voice of my beloved! Behold, he comes, leaping over the mountains, bounding over the hills.

She announces his anticipated arrival with excitement (Behold) and describes his coming as him leaping over the mountains and bounding over the hills.

The mountains and hills are obstacles to him getting to her, but he is more than willing and able to overcome them in order to reach the young woman.1
